In this video, I show you step-by-step how to make Puerto Rican Pollo en Fricasé. INGREDIENTS: Chicken Seasoning: • 2 tbsp extra virgin olive oil • 6-7 chicken pieces (dark meat) • 4 garlic cloves, mashed • 2tsp salt • Black pepper Enfricasé: • 2 tbsp extra virgin olive oil • 2oz cooking ham • 1/4 cup sofrito (2oz) (my recipe is linked below) • 1/2 cup tomato sauce • 1/4 cup red wine (vino tinto) • 1 tbsp pimientos • 1 tbsp olives • 1/2 tsp oregano powder • 1 packet Goya Sazón con Culantro y Achiote (or other brand) • 1-2 bay leaf • 1/2 cup chopped carrots • 2 medium potatoes, peeled & cubed • 1 cup yuca (cassava), frozen • 3 cups water • Salt to taste Thank you for watching!
