Stir in raspberries; chill. Serve as dip or dressing for fruit. LIME 'N HONEY DRESSING (pg 52) 1/4c sugar 1tsp dry mustard 1 tsp finely chopped onion 1c oil 1/4c honey 1/4c lime juice 1/4c white vinegar 2 Tbsp poppy seed 1/4 c bourbon, if desired In saucepan, combine sugar and dry mustard; mix well. Add onion, salt, oil, hone, lime juice and vinegar. Heat to boiling; reduce heat and simmer 5 minute stirring occasionally. Stir in poppy seed and bourbon. Serve at room temperature with fruit or green salads. Refrigerate leftovers. CRESCENT SPINACH AND CHEESE BAKE (pg 18) 4c cleaned spinach 1/4c finely chopped onion 1/2 clove garlic, minced 1 Tbsp oil 1/4 tsp salt 1/8 tsp pepper 1/2c cooked rice 6oz shredded mozzarella cheese 3 Tbsp grated parmesan cheese 2 eggs, slightly beaten 2 Tbsp milk 8oz can refrigerated crescent rolls Heat oven to 350. Grease 9 inch pie dish or round cake pan. Place spinach in bowl; cover spinach with boiling water. Let stand 5 minutes, stirring once. Drain; chip and drain again on paper towels. In small skillet, cook onion and garlic in oil until tender. Stir in salt and pepper; remove from heat. In medium bowl, combine spinach, rice, 1 cup of the mozzarella cheese, parmesan cheese, eggs and milk; stir in onion mixture. Separate dough into 8 triangles. Place about 1/4c spinach mixture on shortest side of each triangle. Roll up; starting at shortest side of triangle, gently wrapping dough around spinach mixture and rolling to opposite point. Place rolls, point side down, in prepared pan. Bake at 350 degrees F for 25 to 30 minutes; remove from oven. Sprinkle with remaining 1/2c mozzarella cheese.
