Day 10: Kalpa Food Tour | Chilta, Poli, Kudro ki Roti, Unlimited Thali @ Choti Wala Dhaba
Our Flavours of Spiti journey comes to its final chapter as we travel from Kalpa to Badhal, exploring the food, people and traditions of Kinnaur. From simple homemade breakfasts to hearty local meals, this episode is all about experiencing the region through its flavours. We begin the day at Apple Pie Hotel, where Mahavir ji prepares a light yet wholesome breakfast of chilta served with fresh yogurt. Made using two varieties of buckwheat flour, ogla and fafda, along with onions and green chillies, this traditional pancake has a wonderfully earthy, nutty flavour and makes for a comforting start to the day. Our next stop is Roghi Village, where we meet a local woman farmer on her way to the fields and get a glimpse into everyday life in the mountains. We then visit the historic Narayana Temple, where a local resident gives us a tour before taking us to see a traditional water-powered flour mill that has served the village for generations. From there, we stop at a local dry fruit shop to sample some of Kinnaur's renowned fruits and nuts before making our way to Kalpa. We also visit the beautiful Narayana Nagini Temple and later meet one of our subscribers, whose recommendation leads us to some wonderful local flavours. At Manirang Café, the owner introduces us to traditional Kinnauri dishes like poli and kodro ki roti. Simple, nourishing and deeply satisfying, these humble preparations offer a delicious insight into the region's culinary heritage. Our food trail continues at Muskan Chinese Food Corner, a bustling local favourite. We dig into a hearty mixed thukpa loaded with hand-pulled noodles and momos, followed by a plate of local-style chowmein, stir-fried over high heat in a wok and packed with flavour. A quick stop at Annapurna Sweets lets us sample their coconut macaroon before we continue to our final destination. The journey concludes at Badhal Choti Wale Dhaba, where the ever-cheerful owner serves us the house special thali featuring rajma, kadhi, sarson ka saag, makki ki roti and other comforting accompaniments. It is a wholesome, soulful meal and the perfect way to bring our Kinnaur food trail, and the Flavours of Spiti expedition, to a memorable close.
