It's been perfect weather these days, I often go to the park and enjoy the weather so much 🥳✨ Chapter: 0:00 Intro 0:56 Yaki udon (fried udon) 3:00 Kake udon (basic udon soup) 4:18 Curry udon 7:20 Napolitan udon (ketchup udon) 9:31 Creamy mushroom udon Ingredients for one person 👇 *If you’re vegetarian, you can use kombu powder or shitake powder instead of bonito powder :) 🔽Yaki Udon (fried udon) -1 pack udon -1/4 onion -1/2 carrot -50g(1.8oz) cabbage -1 slice bacon (or thin pork belly, sausage) -1tbsp sake -2tbsp soy sauce -1/2 tsp bonito dashi powder -bonito flakes -dried green seaweed (aonori) *optional 🔽Kake udon (basic udon soup) -1 pack udon -230ml (1 US cup) water -1 tsp bonito dashi powder -1 tbsp soy sauce -1/2 tsp mirin -1/2 tsp sake -spring onion -Japanese red pepper *optional 🔽Curry udon -1 pack udon -3 mushrooms -50g(1.8oz) cabbage -250ml (1.1 US cup) water -1/2 tsp bonito dashi powder -1tbsp corn or potato starch -1tbsp soy sauce -1tbsp mirin -some curry powder -spring onion 🔽Napolitan udon (ketchup udon) -1 pack udon -1 slice bacon -1/4 onion -1/2 green paprika -1/2 carrot -3tbsp ketchup -1tbsp tonkatsu sauce -1tbsp milk -10g (0.35oz) butter -cheese for topping 🔽Creamy udon -1 pack udon -5 mushrooms -1/4 onion -10g (0.35oz) butter -1tbsp corn or potato starch -1/2 tsp bonito dashi powder -200ml (0.85 US cup) milk -1tbsp miso -cheese for topping ------------------------------ ★About seasonings ——Substitute for Mirin and Sake—- If you can’t find mirin or sake in your city, you can substitute them like this👇 For 1 tbsp mirin use either: 1 tbsp sake + 1/2 tsp sugar or 1 tbsp white wine + 1/2 tsp sugar For 1 tbsp sake use: 1 tbsp mirin or 1 tbsp white wine It won’t be exactly the same, but still works 😋 ——Substitute for bonito dash powder for vegetarians—- You can try to find plant based dash powder, like kombu dash powder or shiitake dash powder.
