Ingredients: a: strawberry puree/ filling 600g fresh strawberries (3 cups) 150g white sugar (¾ cup) 1 tbsp lemon zest 3 tbsp lemon juice 22g cornstarch (1 tbsp) 4 tbsp water b: strawberry cake 300g all purpose flour (2⅓ cups) 28g cornstarch (1 tbsp) 2½ tsp baking powder ½ tsp salt 60g milk (¼ cup) 195g strawberry puree (¾ cup) 113g unsalted butter (½ cup) 120g vegetable oil (½ cup) 300g white sugar (1½ cups) 6 eggs (225g) 1 tsp vanilla 1 tbsp lemon juice few drops red gel food color (optional) c: strawberry mascarpone cream 250g mascarpone 500ml heavy cream half cup strawberry puree 8 tbsp powdered sugar 1 tsp vanilla d: garnish 5 fresh strawberries Method: a: strawberry puree: 1. simmer strawberries, sugar, lemon zest and lemon juice for 8–10 mins. 2. blend smooth. 3. mix water + cornstarch. 4. add into puree. 5. heat again and stir until thickened. 6. cool completely. b: strawberry cake: 7. beat butter + sugar. 8. beat eggs separately until fluffy. 9. add eggs into butter mixture. 10. add milk, oil, vanilla, lemon juice and puree. 11. mix. 12. sieve flour, cornstarch, baking powder and salt. 13. fold gently. 14. divide into 2 x 22cm tins. 15. bake at 180°C for 25–30 mins. 16. cool completely. c: mascarpone cream: 17. beat mascarpone smooth. 18. add powdered sugar + vanilla. 19. add cream. 20. whip to soft-medium peaks. d: assembly: 21. place first cake. 22. spread cream. 23. pipe cream wall. 24. add puree filling. 25. place second cake. 26. crumb coat and comb sides. 27. tint remaining cream lightly pink. 28. cover top and shape with spoon. 29. garnish with strawberries. 30. chill before serving. #summerdessert #midsummerseries #strawberrycake #mascarponecake #homemadecake #jordgubbstårta #stockholmfood #summerdessert #cakereels #dessertreels #foodreels
