Homemade Lasagna - Feeds a Large Group! 2 - (12 oz) boxes Oven Ready Lasagna Noodles 2 pounds ground beef 2 pounds sausage 1 large onion, diced 2 cloves garlic, minced 2 (15 oz) cans tomato sauce 6 oz can tomato paste 2 (14.5 oz) cans petite diced tomatoes 1 Tablespoon Italian seasoning 24 oz cottage cheese 1 cup Parmesan cheese, shredded 1 Tablespoon parsley flakes 3 eggs, beaten 3 (8 oz) package mozzarella cheese slices shredded mozzarella cheese Brown and crumble the ground beef and sausage. Drain well. Add onion, garlic, tomato sauce, tomato paste, diced tomatoes, and Italian seasoning. Simmer 20 to 30 minutes. In a large bowl, stir together cottage cheese, Parmesan cheese, parsley flakes, and eggs. Set aside. Spread a small amount of meat sauce in a sprayed lasagna pan (12” x 17” x 3”). Begin layering: noodles 1/3 of the cottage cheese mixture a layer of mozzarella slices, and 1/3 of the meat sauce. Repeat layers two more times ending with the meat sauce. Top with a generous layer of shredded mozzarella cheese. Sprinkle a little more Parmesan cheese on top. Bake at 350° for 45 minutes or cover tightly and freeze. If baking after being frozen, thaw completely before baking.
