Grab your favorite beverage and let's find out. ~Marie Spinach and Cheese Stuffed Shells For the Sauce (from scratch) You can use store bought spaghetti sauce 2 Carrots shredded 1 32 oz Tomato Sauce (home-grown canned or store bought) 2 tsp Italian Seasoning 1 tsp Garlic Powder 1/2 tsp Salt 1 Parmesan cheese rind (optional) For the Filling 1 8 oz Block of Mozzarella Cheese (divided) 1 24 oz Cottage Cheese 1 Egg beaten 1 bag of Spinach 1 Onion 2-3 Garlic cloves 1 Box of Large Pasta Shells Sautee shredded carrots in a tablespoon of oil. Add seasonings and allow the herbs and spices to bloom. Add Tomato sauce and parmesan cheese rind, allow to simmer for 30 minutes while you put everything else together. Sautee the Onion, Garlic and Spinach in a pan until cooked and wilted. Shred the Mozzarella cheese and remove 1 cup for the topping. To the rest of the cheese add the entire container of cottage cheese and one beaten egg, salt and pepper. Add the spinach mixture to the cheese and combine. Cook pasta shells per the recommended manufacturer's time for al dente. Grease your 9x13 pan with your desired oil. Fill each shell with a tablespoon or more of the filling until you've used up all the cheese mixture. (If you have left over shells, you can flash freeze them after they are cool for another meal and store in container of choice.) Laddle tomato sauce over the shells and sprinkle with reserved cheese.
