Cut the vegetables into large cubes. Halve the onions and toast them in a pan until dark brown. Place all the ingredients, including the ox brisket, herbs, and spices, in a pot. Fill with cold water. Bring everything slowly to a boil and simmer on medium heat for about 1–1.5 hours. Do NOT skim off the foam. Only do this at the end. It binds the impurities. Carefully skim the soup from the bottom and, if desired, strain it through a cheesecloth. Remove the meat and serve it as the main course. Scrap the marrow from the marrow bones and serve it on toasted bread alongside the soup.
