This time, we visited San Kissashitsu, a chic coffee shop located in the quiet residential area of ​​Oyamadai/Todoroki in Setagaya Ward, Tokyo. The humorous owner, Yoshiyuki Asano, lightheartedly says that he's managed to survive by the skin of his teeth, but each time he's opened a shop, he's experienced numerous crises beyond his control. Imagine the weight of responsibility he bears in running a shop where coffee enthusiasts entrust their lives, and supporting staff. Yet, he's overcome these challenges because he's deepened his understanding of coffee and strived for the perfect cup served to each customer. Fuji Coffee Machine places complete trust in Mr. Asano, whom they've known since their youth, even asking him to conduct seminars. Mr. Asano is now in his late 60s, and the future of handing over the shop to his beloved apprentice, Shuichi Taiencho, is surely just around the corner. We also asked Mr. Taiencho about his own approach to coffee and the shop going forward. While Mr. Taien Sumi doesn't usually speak much, he has firm beliefs deep down and shared many of his thoughts.
