Mazedar Dum Ka Gosht (One Step Recipe) Ingredients Marination • Mutton/beef 1 kg (I used mutton on bones) • Yogurt 1 cup • Desiccated coconut 5 tbsp • Salt to taste • Red chili powder 1/2 tbsp • Turmeric powder 1/4 tbsp • Garam masala 1/2 tbsp • Coriander powder 2 tbsp • Cumin powder 1 tbsp • Fried onions 1/4 cup • Kashmiri chili powder 1 tbsp (or paprika powder) • Black peppercorns 5-6 • Cinnamon sticks 2 • Bay leaves 1-2 • Green cardamoms 3-4 • Fresh coriander chopped 2 tbsp • Fresh mint chopped 1 tbsp • Lemon juice 1 tbsp Other • Oil 1/2 cup or as needed • Fresh coriander for garnishing Preparation 1. In a bowl, add all the ingredients and mix to form a marinade (thick paste). 2. Add meat and mix. 3. Marinate for 1 hour at least or preferably overnight. 4. To cook the meat, in a pot add oil and marinated meat. Cook on high for 8-10 minutes on high flame so that the raw smell of meat goes off. 5. Now turn the flame low, cover and cook for 2 hours or so on dum until the meat is soft and tender and oil rises to the top. Make sure you check after 20-30 minutes and add a little water if needed. 6. Dum ka gosht is ready! Garnish with coriander and serve with naan.
