Creamy Mango Delight Ingredients • Milk 1/2 litre • Sugar 2 heaped tbsp • Custard powder 2 heaped tbsp • Whipping cream 300 ml (powdered sugar 2 tbsp if cream is unsweetened) • Mangoes • Mango puree (blend 1 mango with 1/2 cup water) • Vanilla tea cake 1, sliced • Some mangoes for decoration Preparation 1. In a pan, mix milk, custard powder and sugar. Cook until the custard is thick. 2. Cover and allow to cool in refrigerator. 3. Meanwhile, peel the mangoes. Finely chop 4 mangoes and blend one mango with 1/2 cup water to make puree. Keep aside. 4. Whip the whipping cream into soft peaks. 5. Add all custard and few tbsp of mango puree. Whisk again until well combined. Fold in mango chunks and broken cookies. Mix using spatula only. 6. Layering: Layer cake slices in a serving dish. 7. Pour half of mango puree on the cake slices and allow to absorb. 8. Pour the custard cream mixture. 9. Top with remaining mango puree 10. Decorate with chopped mangoes. 11. Allow to cool and set in the refrigerator for 4-5 hours. 12. Enjoy!
