We spoke with Aitor Viribay, a researcher in exercise physiology and metabolism, and one of the key figures behind the new lactate gels. Aitor, who for many years was the nutritionist for the Ineos-Grenadiers team and is currently the performance director at Salomon, explains in simple terms what is being touted as the next big revolution in nutrition and performance: lactate gels. A few thousand of these gels were produced in preparation for the Tour de France, which a cycling team has purchased in full and is testing in the French Grand Tour after having recently tested them in other races such as the Tour de Suisse.
