Here are the ingredients you need for 2 or 3 portions: 150 g quinoa 2 courgettes 150 g cherry tomatoes Half an onion 100 g prawns Curry and ginger for a spicy touch Olive oil and salt to taste For the sauce: Olive oil 1 tablespoon mustard Juice of half a lime Vinegar to taste Salt to taste Fresh coriander to garnish Method: Cook the quinoa using the absorption method: use 1 part quinoa and 1 part water. Bring to the boil, then lower the heat and leave to cook covered for 10-12 minutes until the water is completely absorbed. 🌾 In the meantime, cut the vegetables into small pieces and arrange them on a baking tray lined with baking paper. Season with oil and salt. Pour the quinoa onto a second baking sheet lined with parchment paper, season with oil and salt, and distribute it well in a single layer. 🔥 Cook the quinoa and vegetables in a fan oven at 190°C for 35-38 minutes, until the quinoa is crispy and the vegetables are well cooked. Make the sauce: mix together olive oil, mustard, lime juice, vinegar, salt and fresh coriander. Set aside. When the quinoa and vegetables are ready, mix them well and add the freshly sautéed prawns with a pinch of curry and ginger for a spicy touch.
