Easy baked beet crepes. 🛒 Ingredients (8 pieces): Beet crepes: 🔸 1 cooked beet 250 g (8.9 oz) 🔹 150 g (1 cup) all-purpose flour 🔸 2 eggs 🔹 1 tbsp olive oil 🔸 ½ tsp salt 🔹 260 ml milk (1 cup + 1 tbsp) Filling: 🔸 300 g cooked chickpeas (1 ½ cup) 🔹 1 tsp sweet paprika 🔸 75 g arugula (2.6 oz) 🔹 100 g goat cheese (3.5 oz) 🔸 Sunflower seeds Healthy avocado mayonnaise with boiled eggs: 🔸 2 boiled eggs 🔹 1 creamy soy yogurt (100 ml) (you can also use a cow's milk one) (½ cup) 🔸 2 small avocados 🔹 ½ tsp salt 🔸 1 tbsp olive oil 🔹 25 ml lemon juice (1 ½ tbsp) 🍳 Stuffed Beetroot Crepes recipe, step by step: 1️⃣ Put the chickpeas in a bowl with a pinch of salt, the paprika and a drizzle of olive oil. Mix well. Put them in a baking dish and cook at 180 ºC / 350 ºF for about 15 minutes. Set aside. 2️⃣ In a bowl, put the two eggs, the flour, the diced beet, the olive oil, the salt and the milk. Mash very well and let stand in the refrigerator, covered with plastic wrap, about 15 minutes. 3️⃣ In the bowl of your blender, place the boiled eggs, avocados, plain yogurt, lemon juice, olive oil and salt. Blend with your hand blender until you get a thin and thick cream. Add salt if necessary. 4️⃣ Brush a frying pan (the one I used is 24 cm / 9.4 in diameter) with a little olive oil. When it is hot, pour in 1 ladle of the crepe mixture. Spread it over the surface in a back and forth motion with the pan. Cook over medium-low heat. When you see that the surface is no longer wet, turn it carefully. Cook on the other side for another minute. Repeat with remaining batter. 5️⃣ Fill the crepes. Spread a good spoonful of avocado mayonnaise on half of the surface. Top with a handful of arugula, 1 tablespoon of toasted chickpeas, some crumbled goat cheese and some sunflower seeds. Close it by folding it in half, and enjoy!
