Why Mooli Kofte Taste So Good When Cooked Right
Mooli Kofte is one of those classic Indian dishes that can easily go wrong — soggy koftas, bland gravy, or no real flavour. In this video, I’m showing you how to make soft, flavour-packed Mooli Kofte the right way, with a rich, comforting curry that tastes exactly like proper home-style Indian food. The key lies in balancing moisture, spice, and cooking technique — and of course, using a well-rounded masala. For this recipe, I’ve used Emami Mantra Kitchen King Masala, which brings together multiple spices into one balanced blend, making the gravy robust without overpowering the koftas. Ingredients: For the Koftas: 1.5 | Radishes (Mooli - grated) 2 tbsps | Chickpea flour (Besan) 1 tbsp | Fresh Coriander leaves (chopped) 1-2 | Green chillies (chopped) 1/2 tsp | Carom seeds (Ajwain) 1/2 tsp | Turmeric powder (Haldi) 1 tsp | Emami Kitchen King Masala Salt and pepper (as per taste) For the Sauce: 1 tsp | Cumin seeds (Jeera) 1-2 | Green chillies (chopped) 1 | Onion (finely chopped) 1 tbsp | Ginger garlic paste 1 tsp | Red chilli powder 1 tsp | Turmeric powder (Haldi) 1 tsp | Emami Mantra Kitchen King Masala 2 tbsps | Tomato purée 1 tbsp | Lemon juice Salt (as per taste) 1 tsp | Fresh cream Method: Step 1: Squeeze the water out of the grated radish, and save it for later. Step 2: Combine all the ingredients for the koftas to make a smooth dough and shape into small balls. Step 3: Deep fry the koftas in hot oil till they float on the top and turn a nice golden colour. Step 4: Heat some oil in a pan and roast the cumin seeds for a couple of seconds. Step 5: Add the green chillies and chopped onion and sauté for 1-2 minutes. Step 6: To this, add some ginger garlic paste, red chilli powder, turmeric powder and Emami Mantra Kitchen King Masala. Step 7: Add some of the water from the radish and reduce it on a low flame. Step 8: Now, add the tomato purée , lemon juice, salt and fresh cream, and combine everything well. Step 9: Transfer to a blender, and blend till smooth. Step 10: Heat some fresh cream in a pan, and add the blended mixture to it. Mix it well.
