Mix well, cover the bowl in cling film (no need to change bowls or to knead the dough) & a tea towel and leave to rest for 60mins in a warm environment. Divide the dough into two separate bowls, cover and leave to rest again for 30 minutes. Meanwhile, preheat the oven to 230º. Preheat your baking sheet in the middle of the oven to get hot and also add in an empty roasting tray at the bottom of the oven. On a lightly floured surface, take out each piece of dough and stretch & fold each piece 10 times while gently shaping into a baguette shape. Take the top of the dough and fold in half 10 times or as many as the dough will allow! Shape and score the dough & allow to rest on the counter for 5 mins. Before putting the baguettes into the oven, very carefully fill the roasting tray with boiling water. Pop in your baguettes and bake for 12-15 minutes. After 15 mins remove the water bath and turn down the heat to 180º for another 12-15 minutes. Enjoy while delicious and warm 🤎 ………………… Potato & Leek Soup 1 Leek, finely sliced 1 Brown Onion, finely sliced 2 garlic cloves 2 Chicken stock cubes 2tsp chicken bone broth 1.5kg(ish) Potatoes, peeled & chopped In a large pot, melt down some butter and cook down your leek & onion until soft. Add garlic cloves and allow to cook for 2-5 mins until soft. Add potatoes & fill pot with boiling water until potatoes are just covered. Add stock cubes & bone broth. Simmer for around 20mins or until potatoes are soft, remove from heat & blend with stick blender. Drizzle with high quality olive oil, garnish with fresh chives.
