Today we're going to talk about one of Nicaragua's most iconic and delicious dishes: baho! Baho is a traditional Nicaraguan dish distinguished by its slow-cooking method, which allows the flavors to blend perfectly. This delicacy is prepared with basic but very tasty ingredients, such as beef, yuca, green and ripe plantain, and a delicious marinade that we Nicaraguans call marinado, which includes garlic, onion, achiote, and sour orange juice. The cooking process is what truly makes baho special. It is steamed, wrapped in plantain leaves, which gives it a unique flavor and unmatched texture. This method ensures that the meat remains tender and juicy, while the vegetables absorb all the flavor of the natural seasoning. And for this video, we went to the Candeleria market, because it is in the markets where we Nicaraguans try our wonderful traditional dishes. There I met the owner of Baho "Las Chelas." Carolina Castellano welcomed us with open arms, just before celebrating 32 years of this family business, which has fed her family and financed her children's education. Imagine the tempting aroma of this typical Nicaraguan dish, steamed over wood and seasoned to perfection. My mouth watered, and I couldn't wait to try this dish, which is even healthy. Las Chelas baho is located in the Candelaria Market. Anyone looking to satisfy their palate with this dish visits this busy shopping center because it is widely sold here and enhances our cuisine, because it identifies us as authentic Nicaraguans. After tasting this delicious baho, we toured this traditional market. Did you know that before it had its current name, it was known as Mesón de las Masayas, back in the 1970s. Later, they named it the Western Market because most of its customers were from the western neighborhoods of Monseñor Lezcano, Villa Cuba, and others. Later, the market was moved to the vicinity of Fray Bartolomé de Casas Park. There used to be a small square named Candelaria, and thus it was renamed for the third time. Currently, the market is called Leonel Gutiérrez, better known as "Virgen de Candelaria," after the patron saint of these merchants. Located on Monseñor Lezcano Street, it is an icon of Managua's culture and commerce. History tells us that its origin dates back to the first merchants who arrived from Masaya in 1940 to sell their products on the Managua railroad tracks. In 1950, the vendors decided to move to the current Candelaria Park. However, in 1987, the market was closed, and the group of merchants was relocated to the Israel Lewites market until it reopened on July 13, 1992. This important shopping center is one of eight markets in the Nicaraguan capital, and in 2024 it celebrates its 32nd anniversary. With 177 stalls and 89 vendors, the market offers everything from dairy products, jewelry, clothing, meat, tortillas, perishables, and of course, delicious food that is an irresistible temptation for visitors. In recent years, the first phase of the Galerón was built, and the second phase will soon be ready with improved drainage and electrical infrastructure. Although it is one of the small markets in Managua, you can find everything here, because it is stocked to meet the needs of shoppers.
