We introduce the flavors of long-loved restaurants. A long-established kappo ryokan (traditional Japanese restaurant and inn) in Shimada City, Shizuoka Prefecture, is a community-rooted establishment used for celebrations and other special occasions, and is being run by the 6th generation young couple. It's the kappo ryokan "Uoichi," located along the main road in Shimada City. Meals are by reservation only, and private rooms are provided according to the number of people. This day was a family dinner, celebrating the child's advancement to the next grade and school entrance. The meal was a kaiseki (traditional multi-course) meal featuring fish and seasonal ingredients. Customer "They used plenty of seasonal and local ingredients, and it was very delicious." The 6th generation owner, Kazunari Tsukamoto. I learned vegetarian cuisine at a temple in Shiga Prefecture. Ichisei Tsukamoto, Uoichi "Urui is a spring mountain vegetable, and when blanched, it has a crisp, refreshing texture. It's in season right now." He took over from his predecessor four years ago and now runs the business with his wife, Kana. Uoichi was founded in 1868 (Meiji 1). Starting as a fresh fish shop, they have continued to operate the business while changing their business model to include catering and inns. Mr. Tsukamoto "If it's for a celebration like promotion to the next grade or entering school, the customers will say, 'Today we're having red bean rice,' and it becomes a topic of conversation. We keep those things in mind." The children were also satisfied with the delicious meal. Customer "It's been a long time since we've all gotten together. I'm so happy we have a place like this where we can celebrate." Young Proprietress, Kana Tsukamoto "This building dates back to the mid-Edo period. You can still see the remnants of that era in the ceiling, but with the passage of time, we've changed what used to be low tables into sunken hearths." While preserving the historical atmosphere, they are creating a restaurant that suits the times. Ms. Tsukamoto "I don't think continuing things the way they always have been, or the way the previous generation did it, is tradition. I think the same goes for cooking." Mr. Kazunari and Ms. Kana consider what kind of dishes to prepare each day to suit family events and banquets. Young Proprietress, Kana Tsukamoto "When people are wondering where to go for special occasions, I hope they'll choose us. I hope we can be a restaurant that can be close to our customers." They also want to focus on accommodations in the future, and the Tsukamoto couple said they want to promote their charming rooms to foreign tourists, allowing them to experience Japanese culture.
