🦀 AUTHENTIC SRI LANKAN CRAB CURRY RECIPE 🦀 Welcome back to the kitchen Diary. Today, we are making the ultimate Sri Lankan Crab Curry. This recipe brings together fresh crabs, a deeply aromatic, roasted spice blend, and rich coconut milk. It’s spicy, tangy, and absolutely packed with coastal flavor. If you love seafood with a fiery kick, this is the recipe you've been waiting for. Don't forget to serve it with some warm roast paan, string hoppers, or steaming hot rice. 👇 INGREDIENTS YOU WILL NEED: • 250 kg Fresh Crabs (cleaned and cut into pieces) • 2 tbsp Coconut Oil • 1 large Onion (finely chopped) • 3-4 Green Chillies (slit) • 1 tbsp Ginger-Garlic Paste • 2 sprigs of Curry Leaves • 1 sprig of Lemongrass (optional, but highly recommended) • 1/2 tsp Turmeric Powder • 2-3 tbsp Roasted Sri Lankan Curry Powder (Jaffna Powder) • 1 tsp Black Pepper Powder • 2-3 pieces of Goraka (Garcinia Cambogia) or Tamarind paste • 1.5 cups Thin Coconut Milk • 1 cup Thick Coconut Milk • A handful of Fresh Murunga Leaves (Drumstick leaves - essential for that authentic touch) • Salt to taste 👇 QUICK COOKING STEPS: 1. Prep the Crabs: Clean the crabs well and marinate them with turmeric powder and a bit of salt. 2. The Aromatics: Heat coconut oil in a clay pot (or deep pan). Sauté onions, green chillies, ginger-garlic paste, curry leaves, and lemongrass until fragrant. 3. Spice it Up: Lower the heat, add the roasted curry powder and black pepper. Stir quickly for 30 seconds to let the spices bloom without burning. 4. Simmer: Toss in the marinated crab pieces and coat them well with the spice mixture. Pour in the thin coconut milk and add the goraka/tamarind. Cover and cook on medium heat for 10-12 minutes. 5. Rich Finish: Reduce the heat, pour in the thick coconut milk, and adjust the salt. Let it simmer gently for another 5 minutes until the gravy thickens. 6. Authentic Touch: Throw in the fresh murunga leaves right at the end, turn off the heat, and let them wilt in the residual heat.
