Ingredients Dried wormwood - 25 g, flowers and small leaves Anise seeds - 50 g Fennel seeds - 50 g Alcohol - 950 ml 85% For coloring wormwood - 0.5 g mint - 1 g lemon balm - 1 g Absinthe preparation Pour the herbs and seeds into a clean jar and add the alcohol, mixing well. Let it steep in a dark place at room temperature, shaking the jar daily. Then, pour 450 ml of clean water and the infusion with the herbs into the still. Distill over low heat using a special distillation still with a valve. WARNING! Distillation is flammable! Distill over low heat, collecting the distillate drop by drop. I collected 20-30 ml of the heads, based on the smell, and then collected the rest slowly, at a rate of about 3-4 drops per second. The final 100 ml of the head distillate was approximately 900-950 ml. Carefully collect the last 100 ml, as the liquid may suddenly become cloudy. After 500-600 ml, the absinthe will have a yellowish tint—this is normal. After distillation, pour off 400 ml and add the herbs for coloring. These don't necessarily have to be the ones I've listed; others are fine. Let it steep for 1-2 days in a dark place. The coloring is needed to impart a green color and adjust the flavor. This step can be skipped. Afterward, mix the coloring infusion with the remaining absinthe and filter. Let it age in a dark place for a week to a month. This absinthe recipe has a vibrant steppe flavor, with a distinct herbal wormwood aroma and a moderate, not overpowering bitterness in the aftertaste. The sweetness and anise aroma are also prominent. It can be enjoyed neat, in small 20-30 ml portions, chilled, or diluted with juice or cold water. Orange, pineapple, and grapefruit juices work well.
