Spicy Low Carb Meatloaf - On the Blackstone!

Jeff whipped up a spicy low carb meatloaf on his O.G. Blackstone 36. Chris and Nate didn't believe such a massive hunk of protein could be cooked on the griddle without burning but somehow Jeff pulled it off. We didn't manage to get a scorecard done for this cook but this would have come in pretty high. It had a nice crumbly texture, a bit of smoke flavor from the bacon wrapping and finishes with a nice heat from the FULL BOTTLE of hot sauce LOL. Bonus points for the leftovers, they make a great sandwich when you cut a cold slice and seer it on your griddle!
