In this video, I show you how to cook pea porridge with meat and knuckle in an autoclave — and immediately make a strategic stock in jars. The porridge turns out tender, rich, with light hints of jellied meat. An ideal option for a quick lunch or dinner — just open the jar and it's ready. I cook 10 half-liter jars with an accurate calculation of ingredients so that the result is always stable and tasty. Ingredients (for 10 jars of 0.5 l): 1. Peas — 900 g. 2. Pork shoulder — 1 kg (after frying). 3. Knuckle (boiled meat) — 500 g. 4. Onions + carrots (fried) — 400–500 g. 5. Broth — 1.5 l + 300 ml of water. Salt: – for meat — 8–10 g. – for shank — 5 g. – for peas — 5 g. Spices: – black pepper — to taste. – coriander — 1 g. – dried garlic — 5 g (for meat) + 2.5 g (for shank). – bay leaf — 0.5 leaves per jar. – allspice — 1 pc. per jar. For 1 jar: 1. Peas — ~90 g. 2. Meat (shoulder) — 100 g. 3. Shank meat — 50 g. 4. Onion with carrots — ~50 g. 5. Broth — ~160 ml. Preparation stages: Boil the shank: 1. Cook for 1 hour. 2. Remove the foam. 3. Add onion, carrot, a little salt. 4. Cool, separate the meat from the bone. Preparing peas 1. Rinse, do not soak 2. Bring the weight to 900 g. 3. Add salt and pepper. Preparing meat: 1. Cut the pork into small pieces. 2. Fry until crispy. 3. Add salt, spices, mix. Preparing vegetables: 1. Coarsely chop the onion and carrot. 2. Fry. 3. Add boiled vegetables from the broth. Preparing shank: 1. Cut the meat. 2. Add salt, garlic, mix. Add to each jar: – bay leaf and allspice. – peas. – vegetables. – fried meat. – shank meat. – pour broth . Important: vegetables must be under a layer of meat. Autoclaving. 1. Close the jars. 2. Set 1 atmosphere. 3. Cook for 40 minutes at 116°C. Cooling: 1. Let the jars cool. 2. Check for tightness. As a result, we get a thick, aromatic pea porridge, where the peas are completely boiled to a puree, and the meat becomes very tender and juicy. This is a great stock that saves time and always helps out when you need to eat quickly.
