This video explains how olives are harvested in a traditional olive grove in southwestern Spain, before being processed industrially as table olives. Table olives must be harvested with great care, as they are easily damaged, a process known as "molesado" (bumping). The olives must be picked at their optimal ripeness and transported to the processing plant immediately after harvesting to prevent undesirable fermentation.
