This week’s vlog is all about the first snow of the season ❄️ slow days at home, baking, reading, and enjoying the cozy weather. I made lemon cheesecake cookies, a warm turmeric hot chocolate, no bake carrot cake bites and a grilled cheese with soup for the cold evening. I also went on a snowy walk in the forest, took some time to reset, and started reading Crime and Punishment. Lemon Cheesecake Cookies 🍋 Cheesecake Filling Ingredients: 8 oz (226 g) softened cream cheese 3 tbsp (38 g) sugar (adjust to taste) 1/2 tbsp lemon zest 1 tsp vanilla extract 2 tsp lemon juice Steps: 1. In a bowl, mix cream cheese, sugar, lemon zest, vanilla, and lemon juice until smooth. 2. Divide into portions (about 2 tbsp each) and place on a parchment-lined plate. 3. Freeze while preparing the cookie dough. Ingredients: 1 cup (200 g) sugar 1 tbsp (6 g) lemon zest 1/2 cup (113 g) melted butter 1 egg 1 tsp vanilla extract 1 and 2/3 cups (210 g) all-purpose flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 2 tsp lemon juice Steps: 1. Mix sugar and lemon zest together 2. Add melted butter, egg, vanilla extract, and lemon juice; mix until combined. 3. Stir in flour, baking powder, baking soda, and salt until a dough forms. 4. Divide the dough into 6 balls and freeze them for about 20 minutes 5. Place a frozen portion of cheesecake in the center of each cookie ball and seal the dough around it. 6. Arrange all cookies on a parchment-lined baking sheet. 7. Bake at 350°F (177°C) for about 14 minutes, until lightly golden. 8. Let cool slightly before enjoying. 9.
