For the sponge cake: 2 eggs; 120g sugar; 170g carrots; 50g sunflower oil; 45g walnuts; 115g flour; 1 tsp baking powder; 1/3 tsp cinnamon. 1. Preheat oven to 180°C. Prepare a baking sheet by lining the bottom with parchment paper. 2. Beat room temperature eggs with sugar until white and fluffy (about 5-6 minutes). 3. Finely grate the raw carrots or blend them in a blender. 4. Add the grated carrots and sunflower oil to the egg mixture and mix with a spatula. 5. Sift the flour, add chopped walnuts (medium and fine), baking powder, and cinnamon, and mix well. 6. Add the dry ingredients to the dough. Mix everything with a spatula until smooth, using an upward motion. You should get a smooth, medium-thick dough. 7. Pour the dough onto a baking sheet and smooth it out. Bake at 180°C for about 12-15 minutes. Cool the finished sponge cake. Use your hands to crumble the sponge cake. For the caramel: 120g sugar; 40g water; 100g hot cream (33-35%); 30g cold butter; 1/2 tsp salt. 1. Place the sugar in a saucepan, add water, and place over medium heat. Do not touch or stir the sugar, otherwise it will crystallize! 2. When the sugar begins to change color and becomes amber, reduce the heat to low and add the cold butter. Stir. 3. Then pour in the hot cream in a thin stream, but be careful, as the mixture may rise. Stir and remove from heat. The caramel shouldn't be too dark, otherwise it will be bitter. It should be like the one in the video or lighter. 4. Pour the caramel into a bowl, add salt, and stir. Let it cool. The cooled caramel will thicken. For the cream: 400g mascarpone; 250g cream; 50g powdered sugar. 1. For the cream, all ingredients should be cold.
