Enjoy my recipe for Tomasini: a delicious ricotta and sausage filled pastry. The full recipe can be found in my cookbook, Sicilian Feasts, but the ingredients can be found below, as always. Ingredients: Dough 3 cups all purpose flour 1/2 cup of water 1 teaspoon salt 1/2 cup Shortening (Crisco, or Lard, one or the other or half of each) 2 eggs + 1 beaten egg to brush on top of the Tomasini before baking 1/4 cup water Filling 1 to 1 1/2 lbs ricotta 1 to 1 1/2 lbs Italian sweet sausage Place the finished Tomasini in a non stick baking pan or cover the pan with a sheet of parchment paper.
