Malabar Spinach Curry Ingredients: Malabar spinach (Malabaas Pinnach) leaves and stems - as required Coriander seeds - 1 tbsp Cumin seeds - 1 tbsp (add at the end while roasting) Green chillies - 7-8 Coconut - 1/2 cup Toor dal (split pigeon peas) - 1/2 cup Onions - 2, chopped Garlic - 8-10 cloves Tomato - 1, chopped Turmeric powder - a pinch Oil - 4 tbsp (1 tbsp for cooking + 3 tbsp for tempering) Water - 1 litre Tamarind juice - 1 tbsp Curry leaves - as required Dried red chillies - 1-2 Instructions: 1. Prepare the Greens: Cut the Malabar spinach leaves and stems into small pieces. Wash thoroughly. 2. Roast the Masala: Dry roast 1 tbsp of coriander seeds. Add 1 tbsp of cumin seeds towards the end to prevent burning. Roast lightly. Add 7-8 green chillies and 1/2 cup of coconut. Roast again until fragrant. 3. Cook the Base: In a cooker, heat 1 tbsp of oil. Add 2 chopped onions, 8-10 garlic cloves, 1 chopped tomato, and the cut Malabar spinach. Cook with 1/2 cup of toor dal, a pinch of turmeric, and 1 litre of water. Close the lid and cook for 3-4 whistles. 4. Grind the Masala: Grind the roasted मसाला (masala) with water into a smooth paste. 5. Tempering: Heat 3 tbsp of oil. Add 1 tbsp of cumin seeds, curry leaves, and 1-2 dried red chillies. Mix until fragrant. Add the ground मसाला (masala) paste and mix well until the raw smell goes off. Add 1 tbsp of tamarind juice and mix well. 6. Combine: Add the cooked mixture to the tempered मसाला (masala) paste and boil for 5 minutes. 7. Serve: Serve hot with rice or roti. Tips: Adjust the amount of green chillies and dried red chillies according to your spice preference. Use fresh Malabar spinach for the best flavor.
