Start by mixing the dough and adding the flour, eggs, sugar, brewer's yeast, and 1/2 cup water to a stand mixer. She kneads the dough and gradually adds the remaining liquid, then shapes it into a ball, covers it, and lets it rest for 10 minutes. She picks up the dough and kneads it until smooth and even, then lets it rest for another 10 minutes. After the indicated time, she adds cold butter, lemon zest, vanilla extract, and salt. Knead again until smooth and even, and then let it rise for about a couple of hours. Roll out the dough with a rolling pin to form a rectangle about 40 cm long and 50 cm high. Using a pastry wheel, she cuts out 15 strips and wraps them one at a time around the cannoli mold. Place the cannoli on a baking sheet lined with parchment paper, cover, and let rest for 20 minutes. Prepare the classic cream: whisk the egg yolks with sugar, cornstarch, lemon zest, and milk. Transfer to a saucepan and bring to a boil. Transfer the cream to a shallow baking sheet and cover with plastic wrap. To finish, fry the cannoli in plenty of hot high-oleic oil, drain well, coat with sugar, and fill with the cream fillings. Ingredients for the cannoli: 350 g strong flour 4 g dried yeast 2 eggs 40 g sugar 50 g butter 120 ml water Grated lemon zest 1 teaspoon vanilla extract A pinch of salt Oil for frying For the classic cream: 500 ml whole milk 150 g sugar 45 g cornstarch 4 egg yolks Lemon zest For the chocolate cream: 500 ml milk 100 g dark chocolate 150 g sugar 40 g cornstarch 2 eggs 1 knob of butter To finish: 1 cup granulated sugar
