In this episode of "Marinando," Marina Person teaches you how to make kombucha, the fermented tea created by the Chinese that is currently very popular thanks to its nutritional value and, especially, its benefits to the digestive system, as it is composed of beneficial bacteria for the body. Green Tea and Hibiscus Kombucha: STEP 1: FIRST FERMENTATION INGREDIENTS Scoby and starter tea Green tea (10g of tea for 600ml of water) Hibiscus tea (40g of tea for 2L of water) 100g of sugar 2.7L glass jar PREPARATION Make the green tea with hot water and set aside. Then, make the hibiscus tea, which can be made with cold water. In the glass jar, place the sugar and add the strained teas. When the temperature is lukewarm, add the Scoby and the starter tea. Cover the jar with a cloth and an elastic band so that the mixture can breathe. Let it rest for 2 to 7 days, depending on the outside temperature of your region. STEP 2: FERMENTATION TEST At this point, it is necessary to taste the kombucha to measure the amount of sugar. If it is too sweet, let it rest for a few more days. If it is dry, with little sugar taste, move on to the next step. STEP 3: BOTTLING AND FLAVORING INGREDIENTS Glass bottles PET bottles Other ingredients to taste PREPARATION Strain the kombucha and pour the liquid into the chosen bottles, which can be glass or PET. If you wish to bottle in glass, put some kombucha in a PET bottle to use as a reference. At this point you can flavor and add whatever you prefer to the kombucha, such as ginger, a little more sugar, other teas, etc. Leave the bottled tea for 2 or 3 days, and when the plastic bottle is rigid, it's time to consume! HOTEL (SCOBY/MOTHER STORAGE) Make a very strong green tea in a ratio of 80g of sugar per liter of tea. NOTE: Always sanitize all containers and utensils you will use with 70% alcohol!
