[Meat Preparation] Place the pork jowl in boiling water and boil for 5 minutes. ※ Briefly blanch the pork jowl in boiling water to remove any gamey odor! Season the boiled pork jowl with salt and pepper. 2. [Grilling Meat & Simmering Soy Sauce] Place the boiled pork jowl on a preheated pan and grill over medium heat until golden brown on both sides. / Cut into bite-sized pieces. In a bowl, mix [Soy Sauce] 4 tablespoons of brewed soy sauce, 2 tablespoons of rice wine, 3 tablespoons of oligosaccharide, and 1 tablespoon of water. Pour the [Soy Sauce] over the golden-brown pork jowl and simmer. ※ Please reduce the heat briefly when pouring the soy sauce! If the temperature is too high, the sauce may splatter into the oil! 3. [Making Yuzu Sauce] Chop 2 tablespoons of yuzu jam. In a bowl, mix the chopped yuzu jam, 1 tablespoon of lemon juice, 1 tablespoon of brewed soy sauce, 1 tablespoon of oligosaccharide, and a pinch of pepper. Place the yuzu sauce in a small bowl and sprinkle with lemon zest. 4.
