PIT COOKED BBQ & CHICKEN | OAK FIRED BBQ | BEST SC BBQ | WSM SETUP

This cook is using the Weber Smokey Mountain Smoker as a SC Pit Style Oak wood fired BBQ. Close down the top vent and two of the bottom vents, an leave the third vent cracked open. All smoke venting is out of the front door which is left cracked open about 1 1/2 inches and wired in place. This is a microcosm of a SC whole hog pit style cook where the meat is meat side down about 20 inches above the shoveled in oak red hot cinders. The WSM is not being used as a smoker on this cook. The meat is roasting over the oak cinders. This is the only way to produce the flavor you get from this method which is a traditional SC way of doing BBQ pork. The cooker ran a little on the high side at about 300 for the first two hours then down around 270-280 the last 4 hours. The cook was a huge success. Also cooked 2 whole chickens cut and quartered which took on the same flavor and was also delicious. This was the best I've done. All music used is from the YouTube music library.
