"אחרי דוד המלך – אתה הוא המלך של התהילים", אמר עליו ר' דוד בוזגלו, גדול פייטני מרוקו. שמעון גדל על ברכי אביו, והתמחה בכל סגנונות הפייטנות והשירה היהודית. הוא החל להופיע בטקסי בר מצווה וחתונות, ועד מהרה התפרסם בזכות יכולתו הווקאלית המרשימה והדיוק שלו בביצוע. בשנים האחרונות הופיע סיבוני בכל רחבי העולם: צרפת, אנגליה, ספרד, מרוקו, ארצות הברית , ונצואלה, קנדה ובמדינות נוספות. הוא הופיע יחד עם גדולי הפייטנים והזמרים היהודים בעולם כסמי אל מגרבי ז"ל וג'ו עמאר ז"ל ויבדל"א ר' חיים לוק, אמיל זריהן ליאור אלמליח ואנריקו מסיאס. סיבוני ידוע כמומחה לשירה אופראית המשלבת חזנות יהודית ואלמנטים של פלמנקו ספרדי.
