THANKSGIVING IN AN RV : RV Full time w/9 kids

We were really nervous about celebrating holidays in the RV because we didn't know if it would feel special or not. We don't have the kitchen space to make our usual recipes, the dining room to feel special in, or family/friends around to celebrate with. The Best Stuffing Recipe - Serves 4-6(We always double it!) 3 slices Bacon 1 large Red or White Onion - chopped fine 1 C Dry White Wine 1/2 tsp Salt 1 tsp fresh Thyme 1/2 tsp Pepper 1 Tablespoons butter 10 cups fresh bread cubes chicken stock Cook bacon until crisp. Remove from pan and chop fine. Add onion to the pan and cook until onion is beginning to brown. Add wine, salt, thyme, and pepper and adjust the heat to high. Boil rapidly until the wine has almost disappeared. Add butter. When it melts and bread cubes and cook over medium heat to toast. Add bacon bits and stock until desired texture.
