It turns out the school directly opposite my apartment building has turned into a full-blown construction zone. The culprit? A massive excavator—specifically a tracked caterpillar machine with a hydraulic scoop arm used for heavy earthmoving—scraping its metal bucket against the asphalt. Talk about a jarring alarm clock! Once I finally dragged myself out of bed, shook off the morning noise, and got some caffeine into my system, it was time to focus on today's true mission: finding the absolute cheapest tofu in Stockholm. Lately, I have become completely obsessed with cooking vegan food, especially experimenting with soy proteins. I recently discovered a total game-changer for the texture: you absolutely have to freeze your tofu first! Freezing creates ice crystals that expand, and when it thaws and you press the liquid out, it completely transforms the structure into a beautifully porous, meaty, and chewy consistency that acts like a sponge for marinades.
