Late Night One Pan Egg Sandwich

You've probably seen those videos of street vendors in India making savory-spicy egg sandwiches. I thought I'd try doing it with an English muffin and some good cheddar. Came out pretty darn good. I think I'll put this in the regular late night rotation. PLEASE READ!
