The addition of custard adds a rich egg flavor to the "regular" rare cheesecake, making it the ultimate in deliciousness! Please give it a try🌟 This time, I made the bottom by hand to achieve the ultimate result, but you can also make it with store-bought cookies and melted butter! I'll post the recipe for that below, just in case. 🍑 🌟Ingredients🌟 (Makes one 15cm cake pan) [Bottom Dough] ★48g All-Purpose Flour ★24g Almond Powder ★17g Granulated Sugar ★1g Salt ・15g Light Sesame Oil ・20g Walnuts (Chopped) ← Use your favorite nuts instead ・12g Butter [Custard] ・1 Egg Yolk ・20g Granulated Sugar ・Vanilla Beans (Optional) ・10g All-Purpose Flour ・110g Milk [Cheese Dough] ・200g Cream Cheese ・40g Granulated Sugar ・12g Lemon Juice ・All Custard ・170g Heavy Cream (10g + 160g) [If Using Store-Bought Cookies for the Bottom Dough] ・60g Biscuits ・Melted Butter 30g [Preparation] Preheat oven to 170°C. Line the pan with parchment paper. [Directions] (Bottom Dough) 1. Add all ingredients marked with a ★ to a bowl and mix well. 2. Add the light sesame oil and walnuts and mix well. 3. Spread the dough on a silpat-lined baking sheet and bake in a preheated oven at 170°C for 17 minutes. 4. Place the cooked dough in a bowl, add the melted butter in the microwave, and mix. 5. Place the dough into a pan lined with a paper cookie sheet and spread it evenly. (Custard) 1. Place the egg yolks and granulated sugar in a bowl and whisk until pale. 2. Sift in the flour and mix well. 3. Gradually add the milk, heated to just before boiling, and mix well. 4. Transfer to a pot and heat over medium heat. Stir constantly with a spatula, and cook until thickened and thick (see video). When scooped with a spatula, the mixture should drip in ribbons. 5. Wrap in plastic wrap and place an ice pack on top to quickly cool. (Rare Cheesecake Dough) 1. Place the cream cheese in a bowl and knead well. Add the sugar and knead well. 2. Place the custard in another bowl and loosen it with a whisk, then add 10g of cream to make a creamy mixture. 3. Add the smooth custard cream to the cheese dough and mix well. 4. Add the lemon juice and mix well. 5. While ice-cold, whisk the remaining cream (160g) until stiff. 6. Add the cream to the cheese dough and mix until well combined. 7. Pour into a mold and smooth the surface. 8. Chill overnight to harden and it's ready.
