Enzymes: invertase, amylase, catalase, sucrase, coagulating enzyme, protease, etc. Essential organic acids: glucuronic acid, lactic acid, acetic acid, gluconic acid, carbonic acid, usnic acid, tartaric acid, citric acid, etc. Minerals: from tea (iron, potassium, zinc, manganese, copper, calcium, magnesium, fluoride). Lactic acid bacteria, yeasts, polysaccharides, caffeine, and approximately 0.5% alcohol. Medicinal properties of Kombucha: Lactic acid bacteria help regulate intestinal flora. Acetic acid eliminates many potential pathogens. High antioxidant power, especially for the liver. Reduces the risk of heart disease due to the effect of both lactic acid and tea on cholesterol. Slows down carbohydrate digestion, reducing blood sugar levels, preventing and helping manage diabetes. Recipe to prepare 5 liters of Kombucha: 5 liters of chlorine-free water 2 teaspoons of tea (about 6 g). Stewing time: Green tea - 5 minutes, Red tea - 7 minutes, Black tea - 10 minutes Strain the infusion. 3 75g spoonfuls of sugar (white, brown, or panela) When the temperature drops below 28°C, add 100ml of activator (pre-fermented, unpasteurized kombucha liquid). 1st Fermentation: Let it ferment for 15 days at room temperature, ideally around 23°C. 2nd Fermentation: In bottles with a pressure seal, add about 10ml of sugar, molasses, or fruit juice plus your favorite flavorings (fruits, herbs, spices). Fill the bottles with the kombucha from the 1st fermentation until there is only a small amount of space left. After 3 days at room temperature, transfer the bottles to the refrigerator. They are ready to drink!
