Add the carrots and the previously sliced leek "greens." Then add the crème fraîche, garlic, and a little parsley. Next, prepare the "white" parts of the leek: cut them into pieces and cook them gently in butter and olive oil. Serve them pan-fried as an accompaniment to the blanquette. You can also add a steamed potato.
