Start your day with Meditation: Meditate with Abhi:    / meditatewithabhi   Prep time: 15 minutes Cook time: 20 minutes Servings: 8 Ingredients: 4 Purple Sweet Potatoes 6 Tbsp Vegan Butter 1 Cup Plant Based Milk 1 Tbsp Salt 1 Tbsp Dry Thyme 1 tsp Ground Ginger 1 tsp Ground Cumin 1 tsp Red Chili Pepper or Black Pepper 2 Garlic Cloves 1/4 Cup Freshly Chopped Cilantro Method: Wash the purple sweet potatoes thoroughly and slice them into smaller pieces. Transfer the potatoes into a cooking pot, add water to cover the potatoes and boil them for 20 minutes until they are soft. Drain the water and let the potatoes cool down for 15 minutes. Pleal the skin off and mashed them. Chop the garlic and add it to the vegan butter in a small microwave safe container and heat them for 30 seconds. Add the vegan garlic butter to the purple mashed sweet potatoes followed by the salt, ground ginger, red chili pepper (or back pepper), cumin and thyme. Mix well and add the plant based milk. I used almond milk for this recipe but any other plant based milk of your choice will work. Mix well, add freshly chopped cilantro, stir and serve. For a great presentation drizzle some more vegan garlic butter and sprinkle some freshly chopped cilantro. Enjoy!
