How to sieve and prepare Akamu (PAP). Part 1

How to make your own pap/akamu from scratch. Pap is Nigerian corn meal made from wet corn starch. You can also add Millet or guinea corn to make it rich. Akamu ( in Igbo) Pap is processed from dry white or yellow corn. After processing from scratch, the raw akamu/pap is then prepared with hot water before serving as a meal. Ingredients: Dry corn, Millet, Guinea corn and Water. PREPARATION: 1. Wash the dry corn, millet & Guinea corn thoroughly and soak in a big bowel with a large quantity of cold water for 3 days. 2. On the 3rd day, Wash the corn thoroughly, because by then, the corn has become very soft, So, wash them about three times & finally wash into a bag that has the ability to drain water out. The bag will completely drain out that water you used to wash it & give you the opportunity to now use another fresh & clean water to blend them. Take it to the blending engine. Ensure you blend them until it becomes very smooth, remember to use a lot of water to blend. 4. After blending, get a big bowel, drape a washed chiffon cloth over that big bowl and tie it up. 5. Sieve the blended Corn, by collecting some reasonable quantity into d sieve, gradually be pouring some quantity of water on the corn as u sieve, and continuously rinsing it, till only the chaff is left. Then remove the chaff into a different bowel for disposal. Repeat this process until the whole blended corn finish. 6. When done, take off the chiffon cloth and set the mixture of water and akamu aside to settle for at least 1 or 2 hours. 7. When the water looks clear, decant the clear water and pour the rest of the mixture into the cleaned muslin bag. 8. Tie the bag and keep it in such a way as to let the water drain from the pap. When it seems the water has drained off, tie the bag tighter and leave to continue draining the water. Repeat the process as the water drains till no more water drains off. 9. Do not refrigerate. Leave overnight so the akamu can acquire the signature sour taste. Your akamu is ready to be cut into chunks and stored. It can be prepared & served by collecting some quantity of already sieved PAP into a bowel plate, mix with little cold water, and finally use a boiled hot water to prepare it.
