Watch the Lunar New Year's Day Special ▼ • 정월대보름 음식 - About Doenjang: Doenjang (English: Doenjang or soybean paste) is a representative Korean soybean paste. It's a seasoning made by fermenting meju (fermented soybeans) with salt water, then straining out the soy sauce. It's often used in soups, stews, and ssamjang (Korean ssamjang). There are two ways to make soy sauce: using the residue from soy sauce and adding salt water to meju (fermented soybeans). Nutritional Facts and Benefits of Doenjang: Per 100g, it contains 128kcal, 12g of protein, 4.1g of fat, 14.5g of carbohydrates, and ash, iron, phosphorus, calcium, and vitamins. Traditional doenjang, in particular, boasts excellent anticancer properties. Chitooligosaccharides contained in doenjang have anticancer and antibacterial properties, as well as lung cancer suppression and cholesterol reduction. Furthermore, doenjang's high protein content and excellent amino acid composition enhance digestion, and its high content of lysine, an essential amino acid lacking in rice, enhances nutritional quality. The essential fatty acids in doenjang help prevent skin and vascular diseases and promote normal growth. Its high fiber content also prevents constipation, maintains liver and brain health, and provides antioxidant benefits.
