Break and beat the eggs. Season with salt and pepper. Mix the breading ingredients (panko, oats, sesame seeds, shredded coconut). Dip the chicken in the egg. Coat with breadcrumbs and set aside. Bake in the oven with olive oil. For the salad, in a bowl, dice bell pepper, tomato, avocado, mango, and cilantro. Add olive oil, salt, and pepper. For the lime mayonnaise, mix mayonnaise with lime juice, lime zest, cream cheese, salt, and pepper. For the eggs with the water swirl: Small bowl. Cut a square of plastic wrap and a strip to tie it. Place the plastic wrap in the bowl. Brush with olive oil. Add an egg. Close and tie the packet. Boil for 4 minutes and serve (do this when everything is ready to plate).
