INGREDIENTS: Approx 6-7 pounds of pork belly (skin on !!!) 3 Lemons (zested) 1/3 cup Fresh Rosemary (chopped) 1/4 cup Fresh Sage (chopped) 1/3 cup Fresh Parsley (chopped) 3 heads of Garlic (chopped) 2 TBSP of Cracked Pepper Kosher Salt DIRECTIONS: 1) Follow along step by step. It is easier to watch and learn than by reading to learn. 2) Smoke the porchetta at about 350-375 degrees to help start crisping the skin. 3) The key is getting that skin to bubble and crackle, otherwise the skin will be too crunchy and hard.
