Shop Hamdard Khaalis masale now from myhamdardstore.com #HamdardKhaalis #AwadhiBiryani #khaalismasale Ingredients for Awadhi Chicken Biryani • Oil – 250 ml • Green cardamom – 5 • Cloves – 12 • Bay leaf – 4 • Cinnamon – 1 inch • Mace – 1 • Nutmeg – ½ • Black pepper – 12 • Black cardamom – 3 • Sliced onions – 3 • Chicken – 1 kg • Ginger garlic paste – 2 tbsp • Yoghurt – 4 tbsp • Hamdard Khaalis Chicken Biryani Masala – 4 tbsp • Water – 1 glass (for yakhni) • Kewra water – 1 tbsp For Rice: • Soaked rice – 1 kg • Milk – 100 ml • Soaked saffron water • Sugar – 1 tbsp • Rose water – 1 tbsp • Kewra water – 1 tsp Method Boil water in one vessel to cook the rice. In a separate vessel, prepare the chicken base. Heat oil and add all whole spices — green cardamom, cloves, bay leaf, cinnamon, mace, nutmeg, black pepper and black cardamom. Let them splutter. Add sliced onions and cook until golden brown. Add chicken and mix well. Add ginger garlic paste and yoghurt. Mix thoroughly. Add Hamdard Khaalis Chicken Biryani Masala and kewra water. Pour water to create stock (yakhni) and cover the lid. Cook for about 10 minutes. Meanwhile, once water boils in the rice vessel, add green cardamom and cloves. Add soaked rice and cook until 70% done. (Continue with layering and dum process as per your style.)
