I'm traveling to sake breweries and towns across Japan with Masayuki Kusumi, the original author of "Solitary Gourmet," and fellow musician DJ SASA. The channel name, "Bita," is musician slang for tour, and is apparently a backwards version of the Japanese word for travel (tabi). The title "Bita Sake" comes from the fact that we'll be drinking a lot of sake in each place we visit. On this trip, I visited Takenami Sake Brewery in Tsugaru City, Aomori Prefecture, a long-established sake brewery founded in 1645 (Tenpo 2). The first generation started a sake brewery and pawnshop on the east bank of the Iwaki River. In 1807 (Bunka 4), the eighth-generation owner, Shichirobei, gave up pawnshop work and focused on sake brewing, which earned him even more popularity and put the business on track. During the Edo period, there were repeated famines, and Takenami Sake Brewery organized soup kitchens as a way of giving back, saving the lives of the people of several nearby villages. Takenami Sake Brewery's sake can be best described in one word: rich and mellow. The main reason for this is the soft water used in sake brewing, which fully brings out the umami flavor of the rice. Furthermore, it's said that this sake, carefully brewed by the master brewer, tastes even better when served warm. Since its founding in 1830, Takenami Sake Brewery has overcome many challenges to continue producing delicious sake. Currently, the 17th generation master brewer, Takenami Noriaki, is carrying on tradition while also challenging himself to create new types of sake. We hope you enjoy this sake journey, exploring the brewery and Tsugaru City. *The interview was conducted in May 2022. ~Background to the Establishment of the Channel~ This channel is planned and produced by Noie, an izakaya restaurant in Kagurazaka. During the COVID-19 pandemic in 2020, Kusumi-san, DJ SASA, and Noie's representative, Sato, were discussing the idea of doing something together. The pilot project will be a trip to Tsugaru City, Aomori Prefecture in 2022, followed by Shimonoseki City, Yamaguchi Prefecture in May 2023 and Gose City, Nara Prefecture in June. The video will essentially be a stroll around sake breweries and their surrounding townscapes. About Noie Noie's concept is "a place you can drop in to just like you're at home." The interior is a warm, inviting space, punctuated by the warmth of wood. There are counter and table seats, and the restaurant is suitable for both solo and group diners. Noie offers a wide selection of dishes that go well with sake. They also carry a selection of carefully selected sake brands from around the country, allowing you to choose the perfect sake for your meal. In addition to enjoying food and drinks, Noie is a place where you can deepen your connections with other customers, and you'll often find lively conversations with regular customers.
