Black Sea Pide Ingredients: For the Dough: 2.5 cups water - 450 ml 20 g fresh yeast 1 tablespoon granulated sugar 750 g flour 1 heaping teaspoon salt For the Minced Meat Filling: 2 tablespoons butter 500 g ground meat 1 large onion Salt Black pepper Preparation: For the Dough: In a mixing bowl, combine the water, fresh yeast, and granulated sugar and mix. Place the flour in a separate mixing bowl and make a well in the center. Pour the starter mixture into the center and knead first with a fork, then with your hands. After kneading, cover the dough with plastic wrap and let it rise for 45 minutes. For the Filling: Place a pan on the stove and heat it. Once the pan is hot, add the butter and melt it. Add the onion, ground meat, salt, and pepper, and sauté. To assemble: After the dough has risen, break off pieces of the dough and roll them out into a boat shape, 30-35 cm long and 10-15 cm wide. Place the prepared filling lengthwise in the center of the rolled-out dough. Fold the remaining dough over the filling and pinch the two edges together to seal. Bake in a preheated oven at 250°C (450°F) for 10-12 minutes. Once cooked, open the center of your pita, add butter, and serve.
