Carrot cake (serves 6-8) (18cm cake pan) ・Medium carrot—100g (1 carrot) ・Brown sugar—60g ・Olive oil—90ml ・Eggs—2 ・Granulated sugar—60g ・Cake flour—120g ・Baking powder—1 tsp ・Cinnamon powder—1/2 tsp ・Orange zest—1/2 ・Raisins—40g ・Walnuts—20g ・Salt—a pinch -Cream ・Cream cheese—100g ・Unsalted butter—-30g ・Icing sugar—60g ・Orange zest—a little ***Before baking, preheat the oven to 180°C/160°C fan/gas mark 4 1. Grate the carrots and chop the walnuts. 2. Separate the egg yolks and whites. 3. In a bowl, mix the flour with the baking powder, baking soda, cinnamon, and sugar. 4. In a small container or glass, mix the egg yolks and olive oil. 5. Add 4. to the sifted flour all at once and mix with a rubber spatula. Add the grated carrots, walnuts, raisins, and orange zest and mix. 6. Put the egg whites in a separate bowl and start beating. When they start to become pale and foamy, add the salt and half of the granulated sugar and continue beating. Continue beating and add the remaining granulated sugar and beat until stiff peaks form. 7. Add to the bowl from 5. and mix until light and uniform. Pour into a mold lined with cooking paper (parchment sheet) and bake in a preheated oven for about 40 minutes until cooked through and golden brown on the surface. 8. When baked, remove from the mold and cool on a rack until completely cooled. - Make the cream while it cools. 9. Put the cream cheese and butter in a bowl. Add the powdered sugar half at a time, then the orange zest and mix with an electric whisk until smooth. 10. Spoon onto the cooled cake and garnish with the orange zest.
