In this program, we'll explore two different ways of making and eating tamales, a product that, according to Fray Bernardino de Sahagún, was already available in the 16th century at the Tlatelolco Market. This time, we'll visit three places where this Mexican culinary delight is made. Two of these locations are in Mexico City, where we'll see what we might call the everyday use of tamales; and the other is the zacahuil, in the Huasteca region of Veracruz, where we'll witness its ritual use and a very different method of preparation than traditional tamales.
