Banitza - Le video ricette di Lara
Banitza is a traditional Bulgarian recipe made with filo pastry, yogurt, and feta cheese. It was suggested to me by a Bulgarian woman who follows my cooking blog. I wasn't familiar with this recipe, but it intrigued me so much that I wanted to try it. The result was satisfying, and I must say that banitza is truly an excellent dish, simple and delicate. I read that there's also a sweet version of this dish, and as soon as I can, I'll try that too. For now, I'll leave you with my video recipe to learn how to make a rustic banitza. See you soon! Ingredients: 12-15 sheets of filo pastry 250 g feta cheese 3 eggs 1 170 g tub of plain Greek yogurt 1/2 teaspoon baking soda 100 g butter 50 g olive oil Preparation: In a bowl, beat the 3 whole eggs. Add the crumbled feta cheese. Mix well. In another small bowl, place the Greek yogurt and add half a teaspoon of baking soda. Stir until the yogurt becomes almost frothy, then pour it into the bowl with the eggs and feta. Blend everything together. This will be the filling for your Banitza. Melt the butter and mix it with the oil. Grease a baking pan with the butter and oil mixture. Place the first layer of filo pastry inside, making sure it's slightly wavy. Brush it with butter and oil and repeat the process for another 3 or 4 sheets, depending on the number of sheets in your package of filo pastry. After the first layer of sheets, spread half of the filling and spread it evenly. Cover with another 4 sheets of filo pastry, each brushed with butter and oil, and pour the remaining filling over them. Make a final layer of 4-5 sheets of filo pastry, again brushed, and cut your Banitza into squares using a knife. Bake for 40 minutes at 180°C (350°F). Once ready, remove from the oven and sprinkle hot water over it with your fingers.
