I remember ice cream with eggs and blackberries and for me it was the best ice cream in the world. Now try this one and it will stay in everyone's memory and it will surely remain written in notebooks. Enjoy! Ingredients for ice cream: 5 egg yolks 120 g of sugar 500 ml whipping cream Ingredients for caramel: 3 tablespoons water 180 g of sugar 200 ml of cream 20 g butter a pinch of salt I used half of this caramel so you are free to make half the amount, i.e. caramel from half of these ingredients. And more ground biscuits for sprinkling (about 100 g) Preparation of ice cream Whisk 5 egg yolks with 120 g of sugar. Steam the egg yolks for about 20 minutes. Boiling water in a pot should be moderate. For me, it is at 6 degrees out of 9. I steamed the egg yolks for 17 minutes and they reached a temperature of 75 ° C. Eggs are pasteurized at 60 ° C and then you should be safe to use. Do not exceed a temperature of 80 ° C as this can lead to clotting of the protein in the yolks and then the mass will feel like boiled eggs and will have lumps in it like when you make scrambled eggs. Remove the bowl from the steam and leave the egg yolks to cool with gradual stirring so that you don’t get a crust on top. When the yolks are completely cooled, whip 500 ml of whipping cream and add the cooled yolks. Preparation of caramel I prepared caramel in the video and used half the amount. I needed the other half for another video. You can make caramel from half the ingredients for this ice cream. Prepare the caramel by putting 180 g of sugar, 3 tablespoons of water in a slightly deeper pan and let the sugar heat up. Gradually stir it to caramelize evenly. When the sugar has caramelized, add 200 ml of cream and cook for a few more minutes until completely combined. Turn off the stove and when the caramel has stopped boiling, add 20 g of butter and a pinch of salt. Allow the caramel to cool completely. Put a row of ice cream in a bowl suitable for freezing, sprinkle with ground biscuits and pour over caramel. Do this until you have used up all the ingredients.
